I don’t like to cook and I’m not great but if there’s one thing I like to do it’s try recipes from around the world and one of my workhorses is Mexican Tacos.
Obviously mine is a very simplified but fast recipe that I hope you enjoy.
FOR TACOS TORTILLA
Ingredients for about 6 tortillas
- 50 grams of corn flour (in place of Mesa harina)
- 50 grams of flour 00
- 150ml water
- a pinch of salt
- a tablespoon of seed oil
Add the flours well sifted in a bowl
Melt the salt in the water.
Pour the water and oil into the flours and knead away.
If the mixture is too liquid add a little more flour 00.
Let it sit for about 15 minutes.
With the dough well rested, then make some balls and put them on some parched paper. Place another sheet of parchment paper over the balls and start rolling them out with a rolling pin.
You can use a lid to give the tortilla a more precise shape.
Warning: For the shape, do not press with the lid but use it only as a shape and shape it with the knife.
Cook the tortillas in a hot pan.
HOW TO STUFF THEM
You can actually stuff the tacos as you like, but you can also take your cue from here. That’s what you need.
- 300g minced meat
- A spoonful of tabasco
- Paprika
- Chili
- Lettuce
- Shallots
- Cherry tomatoes
- Lemon
- Oil
- Salt
Optional: yogurt sauce
Cook the minced meat with a pinch of salt and halfway through cooking add a tabasco cucchaio, a sprinkling of paprika and ground chilli. Finish cooking.
Cut the lettuce and shallots into strips and season with oil, salt and lemon.
Cut the tomatoes into small cubes and season these with salt and lemon oil.
At this point, top your tacos and add a little yogurt sauce at the end, which dampens the spicy and acidity and refresh the palate.
